Banter<\/a>\u00a0is going back to the country\u2019s premier food and drink festival. After a successful debut at the\u00a0Ballymaloe LitFest of Food & Wine<\/a>\u00a0in 2015 when we did what we were supposed to and didn\u2019t annoy too many people, the festival team have invited Banter back for another round of conversations, discussions, talks and interviews in the Garden Tent as part of this year\u2019s festival from May 20 to 22. Here\u2019s the a la carte menu for the weekend<\/p>\n

The Banter interview: Yotam Ottolenghi<\/strong>\u00a0(Saturday, 4pm)<\/p>\n

Inbetween juggling cookbooks, TV shows, colourful newspaper columns, shops and restuarants,\u00a0our favourite Middle Eastern cuisine champion<\/a>\u00a0takes time to join us at Banter to discuss taste, dishes, vegetables and spices.<\/p>\n

The next big trend<\/strong>\u00a0(Sunday, 11am)<\/p>\n

One for the early noshers in the audience. We ask noted food watchers\u00a0Seamus Sheridan<\/a>\u00a0(Sheridans Cheesemongers),\u00a0Hilary Quinn<\/a>\u00a0(Dublin Doughnut Co) and\u00a0Sally McKenna<\/a>\u00a0(John & Sally McKenna\u2019s Guides) what comes next after kale, chorizo and doughnuts.<\/p>\n

So you want to open your own restaurant?<\/strong>\u00a0(Sunday, 2pm)<\/p>\n

All you ever wanted to know about the art, business, blood, sweat, tears and occasional cheers of running a restaurant in Ireland in 2016, but didn\u2019t know who to ask.\u00a0Jess Murphy<\/a>\u00a0(Kai, Galway) and\u00a0John Farrell<\/a>\u00a0(Dillingers, The Butchers Grill, Super Miss Sue, Luna, 777 etc, Dublin) The most rock\u2019n\u2019roll discussion you will hear this year about what it really takes to run a successful food gaff.<\/p>\n

Fire and smoke<\/strong>\u00a0(Saturday, 10am)<\/p>\n

Forget about the 1916 rising, the real revolution is the one involving copious amounts of fire, smoke and meat. Grilling connoisseurs\u00a0Fingal Ferguson<\/a>\u00a0(farmer, charcutier, cheese maker, butcher and knife maker),\u00a0Francis Mallmann<\/a>\u00a0(1884, Argentina),\u00a0John Relihan<\/a>(Duagh BBQ Festival and Holy Smoke, Cork) and\u00a0Andy Noonan<\/a>\u00a0(Big Grill festival) tell us what gets them hot under the collar above slow and low.<\/p>\n
